Purchase a cull lamb. A cook book with our favorite recipes is included in the cost.
The lamb can be butchered on site for no additional cost and cut as you prefer. Lamb will be wrapped in freezer paper. Your yield will be 100% of the hanging weight -- more if you want the organ meat -- usually around 25-30 lbs.
Our Icelandic lamb is raised on our silvopasture. We rotationally graze our sheep in the summer and the sheep do receive a small amount of grain to maintain order when moving the sheep through the woods. Icelandic lamb is succulent with a slightly herbaceous flavor. Icelandic lamb is prized by chefs world wide for its delicate taste.
